Preparation
Here's a recipe for a delicious vegan cheeseburger:
Ingredients:
For the burger patties:
1 can (15 oz) black beans, drained and rinsed
1 cup cooked quinoa or brown rice
1/2 cup finely chopped onion
2 cloves garlic, minced
1/4 cup chopped fresh parsley or cilantro
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon chili powder
Salt and pepper, to taste
1 tablespoon olive oil (for cooking)
For assembling the burger:
Vegan burger buns
Vegan cheese slices
Lettuce leaves
Sliced tomatoes
Sliced onions
Pickles
Vegan mayonnaise
Ketchup
Mustard
Instructions:
In a large mixing bowl, mash the black beans with a fork or potato masher until they are mostly mashed but still have some texture.
Add the cooked quinoa or brown rice, chopped onion, minced garlic, chopped parsley or cilantro, smoked paprika, ground cumin, chili powder, salt, and pepper to the bowl. Mix well until all ingredients are evenly combined.
Divide the mixture into equal portions and shape them into burger patties. You should get around 4-6 patties, depending on the size you prefer.
Heat the olive oil in a skillet over medium heat. Once hot, add the burger patties to the skillet and cook for 4-5 minutes on each side, or until they are browned and heated through.
In the last minute of cooking, place a slice of vegan cheese on top of each burger patty and cover the skillet with a lid to allow the cheese to melt.
While the burger patties are cooking, lightly toast the vegan burger buns.
To assemble the cheeseburgers, spread vegan mayonnaise, ketchup, and mustard on the bottom half of each bun. Place a lettuce leaf and a slice of tomato on top.
Place a cooked burger patty with melted cheese on top of the tomato slice, followed by sliced onions and pickles.
Cover the burger with the top half of the bun and secure it with a toothpick if necessary.
Serve the vegan cheeseburgers immediately with your favorite sides, such as sweet potato fries, coleslaw, or a salad.
Enjoy your delicious homemade vegan cheeseburgers!
